Starch and Viscosity in Vegetable Puree and Soup Bases

Record how temperature, preparation and recipe change the mixing, pumping and heat-transfer duty.

01 / selection

State the material history

Record whether the feed is raw, cooked, cooled, frozen, thawed or purchased puree, plus solids and added ingredients. Starchy vegetables cannot be specified from a cold-water flow rating or a product name alone.

Measure across the process

Give viscosity with method, unit, temperature and shear condition where available. Include particles and fibres. Follow heating, holding, cooling and restart because the thickest or most difficult state may occur away from the inlet.

Select connected equipment

Review agitator torque and coverage, pump pressure and shear, transfer length, exchanger passage and deposits. Confirm cleanability after the actual recipe. State unknown values in the enquiry and use a representative material trial before accepting the envelope.
